Cookies

  • 1 cup gluten-free all purpose flour
  • 1 cup oats
  • 1/2 cup almond flour
  • 1 tsp psyllium husk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 2 tbsp chia seeds
  • Zest of 1 orange
  • 1 egg
  • 1/2 cup butter, softened
  • 1/2 cup sweet potatoes, cooked & mashed
  • 1/2 cup peanut butter
  • 2/3 cup coconut sugar
  • 3/4 cup chocolate chips
  • 1/2 cup pistachios

Topping

  • 24 pecan halves

Instructions

  1. Mix together all of the cookie ingredients & place 1 pecan half on top of each cookie.
  2. Bake for 10 minutes at 350 & let the cookies cool on the baking tray for 15 minutes.
