- 1 cup gluten-free all purpose flour
- 1 cup oats
- 1/2 cup almond flour
- 1 tsp psyllium husk
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cardamom
- 1/2 tsp ginger
- 1/2 tsp salt
- 2 tbsp chia seeds
- Zest of 1 orange
- 1 egg
- 1/2 cup butter, softened
- 1/2 cup sweet potatoes, cooked & mashed
- 1/2 cup peanut butter
- 2/3 cup coconut sugar
- 3/4 cup chocolate chips
- 1/2 cup pistachios
Topping
- 24 pecan halves
Instructions
- Mix together all of the cookie ingredients & place 1 pecan half on top of each cookie.
- Bake for 10 minutes at 350 & let the cookies cool on the baking tray for 15 minutes.
