Radish Salmon Quiche – Keto

Ingredients
- 1/4 cup butter or ghee
- 2 cups radishes, finely sliced
- 1 onion, finely sliced
- 1 cup spinach
- 4-6 oz salmon fillet
- 1/3 cup fresh mint
- 1/3 cup fresh cilantro
- 6 eggs
- 1/2 cup milk
- 1 tsp salt
- Optional: Chopped brie for the top
Instructions
- Fry the radishes & onion in butter over medium heat for about 7 minutes.
- Line the bottom of a casserole dish with the radishes & onions.
- Fry salmon & greens for 10 minutes, then place them on top of radishes & onions.
- Mix eggs, milk & salt. Pour the egg mixture in the casserole dish.
- Bake for 30 minutes at 350.
- Place brie pieces on top of the quiche and broil for 5 minutes.
