Qurutob – ҚУРУТОБ

My favorite Tajik dish that my host family of 2 years made on a weekly basis. Serves 4 as a main dish, or 10 as a side dish.

Rooted in the culinary traditions of Tajik households, this dish brings together humble ingredients—fatir bread, tangy yogurt, fragrant herbs, and walnuts—to create a comforting, communal meal that reflects the region’s deep appreciation for shared food and seasonal bounty. Its layered textures and interplay of warm and cool components highlight the resourcefulness of Tajik cuisine, where preserved dairy, fresh produce, and simple breads come together to nourish both body and culture. Traditionally eaten with the hands, it underscores a sense of connection and hospitality central to Tajik foodways.

Nutritionally, this recipe offers a balanced blend of protein, healthy fats, and fiber. Greek yogurt provides probiotics and calcium, while walnuts contribute omega-3 fatty acids and satisfying richness. The generous mix of dill, parsley, cilantro, and green onions delivers antioxidants and micronutrients, supporting overall wellness and digestion. Ingredients

  • 2 loaves of Fatir bread
  • 2 cups Greek yogurt
  • 1 tsp salt
  • 1/4 cup water
  • 2 onions, thinly sliced
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1/2 cup walnuts, finely chopped
  • 1/4 cup dill, finely chopped
  • 1/4 cup parsley, finely chopped
  • 1/2 cup green onions, finely chopped
  • 1 cup cilantro, finely chopped
  • 4 persian cucumbers, diced
  • 2 tomatoes, thinly sliced

Instructions

  1. Prepare your 2 loaves of Fatir bread & rip them into small pieces.
    • If your bread is not fresh, heat the loaves up in the oven for 15 minutes at 200, before ripping them apart!
  2. Bring the yogurt, salt, and water to a simmer in a saucepan. Simmer for 25 minutes, occasionally stirring.
  3. Fry 1 1/2 onions in the olive oil & butter for 10 minutes. Save the remaining 1/2 raw onion!
  4. Mix together the chopped herbs. Pour half of them into the yogurt mixture.
  5. Add the walnuts & bread pieces into the yogurt, and mix well.
  6. Place the yogurt covered bread in the bottom of a large serving dish.
  7. Place half of the cucumbers on top of the bread, followed by half of the tomatoes, 1/4 of the herbs, and all of the raw onions.
  8. Add the remaining cucumbers, tomatoes, and herbs on top.
  9. Cover the dish with the fried onions, and pour the butter & oil mixture on top.
    • Enjoy immediately, and eat with your hands!!
