Turkish Bean Stew – Kuru Fasulye

This hearty white bean and beef stew is a nourishing, protein-rich dish that brings together the comforting flavors of slow-cooked legumes and tender meat. Soaking the beans overnight not only reduces cooking time but also enhances digestibility, while simmering them in a spiced tomato and red pepper paste base ensures each bite is rich and flavorful. Aromatics like garlic, onions, and red bell pepper provide natural sweetness and depth, complemented by a carefully balanced blend of paprika, cumin, turmeric, and black pepper, which add warmth and subtle complexity.
The addition of butter and olive oil lends a silky texture and healthy fats, while fresh cilantro at the finish brightens the dish with a pop of color and freshness. This stew exemplifies how traditional comfort food can be both satisfying and nutrient-dense, offering a balanced combination of protein, fiber, and antioxidants. Perfect for family dinners or meal prep, it is a wholesome option that satisfies both taste and nutritional goals.
