Turkish Bean Stew – Kuru Fasulye

Ingredients

  • 3 cups dried white beans + 2 tsp salt
  • 1/2 cup butter
  • 1/4 cup olive oil
  • 5 garlic cloves, minced
  • 1 1/2 onions, finely diced
  • 1 red bell pepper, finely diced
  • 1 pound stew meat
  • 2 tbsp red pepper paste
  • 2 tbsp tomato paste
  • 1 1/2 tsp paprika
  • 1 1/2 tsp cumin
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tbsp salt
  • 1 handful cilantro, chopped

Instructions

  1. The night before making this meal, pour the beans & salt in a large bowl and fill with water. Soak overnight.
  2. Bring the beans to a boil, turn off heat & cover. Let the beans sit in the pot for 2 hours.
  3. In a deep pot melt the butter, add the garlic and saute for 30 seconds.
  4. Add in the onion & pepper. Stir until softened; about 5 minutes.
  5. Add in the meat. Simmer for 10 minutes.
  6. Add in the tomato paste and red pepper paste. Simmer for 3 minutes.
  7. Add in the beans. Simmer for 3 minutes.
  8. Add spices & cover beans with boiling water.
    • Make sure there is an inch of water on top of the beans.
  9. Simmer for 20 minutes, then add cilantro.
  10. Simmer for 30 more minutes.
